Any old forager can make sloe gin - it's a lovely thing to have in the cupboard but once you can buy something in the supermarket, the shine really does wear off. We love making infused booze and it is a lovely way to showcase wild ingredients that are otherwise tricky to capture. In this instance, we have taken a much-loved wild fruit and combined it with this traditional preservation method. The result is pretty exquisite! Picked carefully from wild moorlands, our bilberries are then infused in gin for a whole year. It would be simple to then bottle it but no, we've gone one step further and aged it for another 12 months, allowing the natural tannins to soften and the drink to mature properly. To drink it young would be such a waste of this premium tipple.

Enjoy it neat to warm the cockles or lightly sparkling with a dash of your favourite fizz. Feeling wild? Add a dash of homemade hogweed seed bitters to raise your cocktail game.
