Excited by some roadside porcini action, I fill many baskets with beautiful porcini/cep/penny bun mushrooms before setting up camp for the night and cooking up a gorgeous wild mushroom goulash sort-of-thing. First of all, however, I pay homage to one of the best culinary mushrooms out there with a classic dish: porcini carpaccio.
