Technically not really a cider as it features fruit other than apples and pears (we won't bore you with the technicalities here) but this crisp beverage has been made using 100% wild apples, with not an orchard in sight. Yes, apples from orchards are loved and nurtured and have their place in the world, but that's not our game. So we headed out into the woods looking for wild, feral and often secret apple trees that were groaning under the strain of fruit that would otherwise go to waste. There is no control as to which species we would find (apples notoriously form hybrids very easily so ID-ing them would have been tricky anyway) but what we do know is that gnarly, bitter apples that you wouldn't dream of eating make SUPERB cider. Add to that that other bitter hedgerow fruit, the trusty sloe, and what you have here is a true taste of the woods, that we even aged for a year to allow the tannins to mellow and create a smoother drink.
It is a tart, crisp cider that should be enjoyed gazing into the fire on a chilly autumn night.
